La Vista Motel Announces El Piñon, a New Coffee Shop and Cocktail Bar
Ephemeral Rotating Taproom Founder to Lead Operations; Servant Coffee to Provide Locally Roasted Beans
DENVER, CO — As part of the highly anticipated revival of La Vista Motel on East Colfax Avenue, a new coffee shop and cocktail bar, El Piñon, will open on site in Fall 2025. Named after the Spanish word for “pine nut,” El Piñon will offer craft cocktails, espresso drinks, and a retro-inspired gathering space for both hotel guests and the surrounding neighborhoods of Park Hill, Hale, and Montclair.
El Piñon will be operated by Weston Scott, founder of Ephemeral Rotating Taproom, a neighborhood bar located just North of Denver’s City Park that serves drafts from rotating breweries. With his experience and creativity in curating a unique, community-focused bar experience, Scott brings a fresh perspective to El Piñon and La Vista Motel.
Coffee at El Piñon will be supplied by Servant Coffee, a Denver-based roastery founded on principles of traceability, quality, and community impact. Guests can expect a menu of espresso drinks, cold brew, and seasonal offerings using ethically sourced beans from around the world.

“Our vision for La Vista Motel is to celebrate the spirit of 1960s Colfax, and El Piñon helps bring that idea to life,” said owner Nathan Beal. “We want this to be both an amenity for guests and a neighborhood bar, coffee shop, and community meeting place. We’re thrilled to have Weston and Servant Coffee on board for this exciting project.”
The bar and coffee shop will be open to the public and accessible from the street-facing front of the motel. A downstairs event space will also be available for private rentals, designed with a mid-century flair to match the motel’s larger aesthetic. Guests can expect locally roasted espresso in the mornings and original craft cocktails in the evenings, all served in a setting that nods to the past while feeling distinctly Denver.
Renovations for La Vista Motel and El Piñon began in Spring 2024, with a projected opening in Fall of 2025.
